Quick and easy to make, super healthy and perfect for a light springtime dinner, here is Natty's secret recipe...
Ingredients
Serves 2 people
2 fresh cod fillets (or you can use haddock or sea-bass too if you prefer)
Rice wine vinegar (enough to cover fish)
1/2 fresh lemon, squeezed
Mixed herbs
A sprig of vine tomatoes, chopped in half
2 punnets samphire
2 balls of beetroot, chopped into chunks
A handful of pine nuts
How to make
1. Cover your fish with rice wine vinegar in an oven-proof dish, pour over half the lemon juice and sprinkle of mixed herbs
2. Put in the pre-heated oven (180) for around about 15 mins (keep checking)
3. Put the chopped beetroot, tomatoes, samphire and pine nuts into a frying pan with a blob of coconut oil. Stir for 3 - 5 minutes and then add a dash of the lemon juice.
4. Serve veggie mix onto a plate and then transfer the fish onto the top.
